Barley Kale Soup
1 1/4 cup barley (pearl)
10 cups roughly chopped green kale (2 bunches)
1 1/2 tbs. thinly sliced mushrooms
2 gallon water
6 Tbs. vegetable base
3 cups sliced black olives
6 Tbs. lemon juice
1 tsp. black pepper
1 onion quartered and thinly sliced
1/4 cup olive oil
Saute' onion in oil until tender.
Rinse kale and mushrooms and add to onion.
Saute' until mildly tender.
Rinse barley and add with remaining ingredients
Simmer until barley is tender.
Makes 10 Quarts
